The first craft distillery in southern Arizona since Prohibition, officially incorporated in 2011 by furniture maker Stephen Paul and his daughter Amanda after Stephen wondered whether mesquite could replace peat in whisky-making; produces Whiskey Del Bac, an American single malt made from house-malted, mesquite-smoked Sonoran Desert barley.

The unsmoked sibling to Whiskey Del Bac's mesquite-forward Dorado, made from 100% malted barley mashed, fermented, copper pot-distilled, aged, and bottled at the Tucson distillery in new American white oak; named to Wine Enthusiast's Top 100 Spirits list in 2021.
A grain-to-bottle single malt made from barley smoked over native Sonoran Desert mesquite wood rather than peat, twice-distilled and aged in medium-char American oak.
