Founded in 2011 by Jeffrey Baker with Master Distiller David Pickerell (formerly of Maker's Mark), the first US distillery since before Prohibition to traditionally floor-malt its own estate-grown grain; a field-to-glass operation on an 1806 Hudson Valley farm that produced the world's first Solera-aged bourbon.

Made from barley grown and floor-malted on Hillrock's own Hudson Valley estate, small-batch pot distilled and aged roughly two years; some batches use barley smoked with imported Speyside peat.
The first American whiskey aged using the Solera method borrowed from Sherry and Cognac production, finished in 20-year-old Oloroso sherry casks; grain is grown and floor-malted on the Hudson Valley estate
