Founded around 2013 by outdoorsmen and Dutchess County residents Paul Coughlin and Gerald Valenti on the family's Rolling Hills Farm in the Hudson Valley; uses the farm's cornfields and natural spring water for small-batch bourbon and rye, with a barrel-exchange partnership sending emptied bourbon barrels to a local sugarhouse for maple syrup aging.
