Chicago's first distillery since the mid-1800s, founded in 2008 by husband-and-wife team Robert Birnecker and Sonat Birnecker Hart, who left academic careers to bring Robert's Austrian family's distilling traditions to the US; a grain-to-bottle, certified organic and kosher operation in the Ravenswood neighborhood known for its 'heart cut only' philosophy and unusual single-grain whiskeys like millet and oat.

The first commercially available whiskey made from millet, distilled from a 100% organic millet mash at Koval's Ravenswood, Chicago distillery using only the "heart cut" of the run, aged three years in 30-gallon new charred American oak; unfiltered, gluten-free, and certified organic and kosher. Won Silver at the 2015 SIP Awards.
One of the first commercially available 100% oat mash whiskeys, distilled at Koval's Chicago distillery using only the heart cut and aged up to 24 months in 30-gallon new charred American oak from Minnesota; won a Gold Medal from the American Distilling Institute and was named 2012 Best Local Spirit by the Chicago Reader.
A 100% organic rye whiskey aged in 30-gallon new charred oak barrels and bottled as an unblended single barrel, made grain-to-bottle at Koval's Chicago distillery.
